Energy bars

IN light of all the marvellous sun we’ve had, let’s keep the energy alive with some energy bars.

It’s a perfect snack for a sportsman who needs an extra burst of energy, or busy mums and kids.

Ingredients

Sunflower seeds
Sunflower seeds

280g unsalted butter
225g light brown sugar
225g golden syrup
55g raisins
450g  porridge oats
1 tsp ground cinnamon
115g unsalted butter
400g tin condensed milk
55g milk chocolate chips
55g white chocolate chips
55g pumpkin seeds
55g sunflower seeds

Method

Preheat the oven to 220c. Grease a 30 x 20cm baking tin and line the base with parchment paper

Place 280g butter, 115g brown sugar and syrup into saucepan and heat until gently melted.

Add the raisins, oats and cinnamon and stir well. Spoon the mixture into the prepared tin. Press down with the back of a spoon and bake for 15minutes until pale golden.

Put the remaining butter and sugar in a saucepan and heat until melted. Add the condensed milk and slowly bring to the boil, stirring continuously.

As soon as the mixture thickens, remove from the heat and spread over the flapjack. Scatter the remaining ingredients over the caramel and allow to set for one hour.

Now the next time you get an energy slump, reach for these bars rather than the biscuits or chocolate and, as always, enjoy!
