American boiled cake

Hi everybody.

I have been given a lovely recipe this week that is simplistic, easy to make and truly delicious.

It is an American boiled cake given to me by Jane and John Rowe (via the lovely Trix Hawkins, whom I have had the pleasure to work with the past ten years). You will have to excuse the measurements - they are truly old school.

Ingredients and method

1 cup of sugar
1lb (454g) mixed fruit
6oz margarine (150g )
1 tsp bicarbonate of soda
1 tsp mixed spice
1 cup of cold water

Bring all those ingredients to the boil, stand for one minute then add:

1 cup of self raising flour
1 cup of plain flour
2 beaten eggs

Pour into a greased tin and bake for 1 hour 15 minutes at gas mark 4 (180c)

Best chilled before slicing...

And that was the exact recipe and method I was given. It is tried and tested and tastier as it matures, if it can stand around long enough. Enjoy with a cup of tea after a lovely autumnal walk. Until next time, happy baking
